Crushed red pepper is from dried then crushed red chili peppers, primarily cayenne peppers.  They have an earthy, spicy taste.  The most common culinary applications are pizza, pasta, soups, chowders, sausage, vegetable dishes, and pickling.

Cream of tartar is a fine, white powder made from potassium bitartrate, a byproduct of winemaking.  It has a slightly acidic, tangy taste that is similar to vinegar or lemon.  It is used in baking to stabilize egg whites, prevent sugar crystallization, and add a tangy flavor to recipes like snickerdoodle cookies.

 

Rosemary Whole Leaf

Rosemary whole leave has a robust aroma.  Their taste is pungent, earthy, with a pine-like flavor.  They add flavor to baked goods, roasts, stews, and marinades and go well as a garnish for meats and breads.

Ground mace is from the lacy covering of the nutmeg seed.  The flavor is similar to nutmeg but flavor is milder and sweeter with hints of citrus, cinnamon, and black pepper.  It is most commonly used in baking cakes, pies, pastries, and custards, cooking meats, fish, stews, sauces, cream sauces, and desserts.

 

Thyme Leaves

Thyme leaves have a savory, strong flavor with hints of lemon and pepper.  They are used in baking breads, seasoning meats, soups, stews, jams, and syrup.

 

Pumpkin Spice

Pumpkin spice is a combination of cinnamon, nutmeg, ginger, and cloves.  Traditionally is has been used in pumpkin pie, pumpkin muffins, pumpkin cookies, and pancakes.  In recent years it’s become popular during autumn in a wide variety of foods and beverages (e.g., donuts, potato chips, coffee, etc.).
