This is milled from scoured rye.  It provides an authentic rye flavor, appearance, and texture for pumpernickel breads.

 

Semolina Blend

This semolina blend is made from durum flour which contains durum wheat, niacin, iron, thiamin, riboflavin, and folic acid.  It is preferable for making homemade pasta to Italian breads.

 

Whole White Wheat Flour 50#

The whole white wheat flour is milled from high protein white, spring wheat.  It has a protein level of 12%.  This has a mild flavor unlike traditional whole wheat flour.

This is milled from high protein spring wheat.  It has a protein level of 13.8%.  This helps bakers create more nutritious whole grain products.

 

Medium Rye Meal Pumpernickel Flour 50#

Whole rye berries are coarsely ground to make the meal for this flour.  Rye pumpernickel flour is great for baking into breads.  The resulting baked goods are dense, dark, and strongly flavored.
